We use carefully selected organic fertilizer, about twice as much as regular matcha, to help the tea plants accumulate umami components.
The exquisite flavor of tencha and matcha is determined by how well amino acids are concentrated in the new shoots.
Shading is applied in stages from the germination stage, up to 95%, higher than the 85% shading rate typically used in cultivation, allowing the new shoots to retain their umami components.
The tea is picked only once a year, and each bud is carefully hand-picked by tea pickers, who then immediately process it into tencha tea while maintaining its freshness.
